Tips for Tuesday
I found a great new recipe at the hospital cafeteria of all places! This chicken smothered in sweet, sassy salsa was so delicious I made note of the ingredients and looked it up online when I got home. This particular version came from Kraft Recipes.
CHICKEN with SASSY CITRUS SALSA
2 - 11 ounce cans mandarin oranges, drained and chopped
1/2 cup chopped red pepper
1/3 cup finely chopped red onion
1/4 cup honey mustard
1 Tablespoon lime juice
1 Tablespoon chopped cilantro (I couldn't find fresh so I used dried)
6 boneless, skinless chicken breast halves (about 1 1/2 pounds)
Mix all ingredients with the exception of the chicken. Cover and refrigerate several hours, allowing the flavors to blend.
Grill, broil or cook the chicken on the stove top about 5-6 minutes on each side or until cooked through. Top with prepared salsa.
This sweet salsa was great on tortilla chips too!
